French beans (Phaseolus vulgare) Domesticated in Central America thousands of years ago, and spread around both North and South America before being “discovered” by Europeans. They come in many varieties, including small black Turtle Beans, red Kidney Beans, green Flageolet Beans, white Haricot Beans and many more varieties in between. They are cultivated both for their fresh green pods and dried seeds.

Beans like this are a great source of reliable protein-rich food if the seeds are dried and stored carefully.
